Cooking with Kids - BLT

My daughter loves bacon and will take any excuse to sneak some when it is just out of the oven.
Tomatoes are just coming into my garden and the lettuce is growing like a weed. Corn is in at the farmers markets.
All this adds up to one delicious salad.

Bacon, Lettuce, Tomato and Corn Salad

6 slices bacon
1 garlic clove, minced
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1/4 cup mayonnaise
Salt, pepper
1 head romaine lettuce, shredded
8 ounces cherry tomatoes, halved
1/2 cup cooked corn kernels

Cook bacon in a medium-sized skillet. Remove when crisp; drain on a

paper towel. Remove bacon fat from pan. Return 2 tablespoons to pan, and
turn heat to medium.

Add garlic to bacon fat in skillet, cook until just fragrant. Whisk in

vinegar, mustard and mayonnaise. Remove from heat. Season with salt and
pepper if needed.

In the meantime, crumble bacon and place in bowl with lettuce, tomatoes

and corn. Toss with dressing.
